Fingerling and Celery Potato Salad with Basil
Ingredients:4 pounds fingerling potatoes
1 ½ cups sour cream
1 ½ cups mayonnaise
1 onion
1 head of celery chopped
1 pkg. bacon, rendered
10 basil leaves
1 cup parmesan cheese
To Taste salt and pepper
Directions:
Boil, cool and cut potatoes. Place in large bowl with celery, cheese, salt and pepper. In food processor add rendered bacon, onion, mayonnaise, sour cream, and basil. Pulse until well blended. Add to potatoes and mix well. Season to taste with salt and pepper.
