Fingerling and Celery Potato Salad with Basil
INGREDIENTS
fingerling potatoes
4 lbs
sour cream
1 1/2 cups
mayonnaise
1 1/2 cups
onion
1
celery, chopped
1 head
bacon, rendered
1 pkg
basil
10 leaves
parmesan cheese
1 cup
salt and pepper
to taste
DIRECTIONS
Boil, cool and cut potatoes.
Place in large bowl with celery, cheese, salt and pepper.
In food processor add rendered bacon, onion, mayonnaise, sour cream, and basil.
Pulse until well blended.
Add to potatoes and mix well.
Season to taste with salt and pepper.
