Seared Russian Banana Fingerlings with Gorgonzola Cream Dip
INGREDIENTS
Russian banana Fingerlings quartered
1 1/2 lbs
butter
1 Tbsp
olive oil
1/2 tsp
shallot, chopped
1/2
garlic, chopped
2 cloves
DIRECTIONS
Place the potatoes in a large saucepan with water to cover.
Bring to a boil over high heat, reduce to medium and cover.
Let simmer until potatoes are tender.
In a large skillet over medium high heat add butter & olive oil, add garlic & shallots sauté until tender.
Add fingerlings and sautee until a bit seared.
Season to taste with salt and pepper.
Gorgonzola Cream Dip
INGREDIENTS
crumbled Gorgonzola cheese
1 cup
sour cream
1 cup
heavy whipping cream
1/2 cup
cream cheese, room temperature
1/4 lb
lemon zest
1 1/2 tsp
fresh lemon juice
1 Tbsp
garlic, chopped
2 cloves
salt and pepper
to taste
DIRECTIONS
In a food processor add sour cream, cream, and cream cheese.
Pulse until mixed together well add lemon, lemon zest, garlic, season to taste with salt & pepper.
Place in a large bowl and stir in Gorgonzola.
