Southwind Farms Bacon-Sriracha Potato Pops



INGREDIENTS


Idaho® Fingerlings, washed and dried
12 count

 

bacon (slices)
12 count

 

Sriracha sauce or hot sauce
1 tbsp

 

water
2 tbsp

 

chopped parsley
1 tbsp

 

sour cream
1 tbsp

 

cheddar cheese, grated
1 tbsp

 

salt and pepper
to taste

DIRECTIONS


Preheat oven to 360 degrees.

 

Mix Sriracha and water together.

 

Lay out bacon on cutting board in long strips and brush bacon with Sriracha mixture.

 

Place potato on the bottom of the bacon strip.  Roll the potato so that it is wrapped completely with bacon nice and tight.

 

Place on a baking sheet and bake for 20 minutes until bacon is crisp and potato is cooked.

 

Remove from oven and place on paper towel.

 

When cool to touch cut potatoes in half and place on skewers.

 

Season again with salt and pepper and place skewers in serving board or in a pint glass.

 

Garnish with chopped parsley, sour cream and grated cheese.

 

Serve warm or at room temperature.

 


Sriracha Ranch Dipping Sauce

INGREDIENTS


Ranch dressing
1 cup
 
Sriracha sauce
1 tbsp


DIRECTIONS


Mix Ranch dressing and Sriracha together.
 
Place in dish for dipping.
