Seared Herb Potatoes



INGREDIENTS


assorted or Russian Bananas cut into 1 inch pieces
1 1/2 lbs

salt
2 tsp

pesto
2 Tbsp

salt and pepper
to taste


DIRECTIONS


Place potatoes and salt in a medium pot and cover in warm water.

Place on high heat, bring to a simmer.

Let simmer until potatoes are fork tender.

Remove from heat, drain off water and place in large skillet over medium high heat.

Coat in pesto and season with salt and pepper.

Cook until potatoes are a browned a bit about 5 minutes.

Serve with any fish, chicken or beef.


Pesto

INGREDIENTS


fresh basil leaves, washed well
4 cups

pine nuts, toasted
1/2 cup

freshly grated Parmesan
1/2 cup

garlic
2 large cloves

extra-virgin olive oil
1/4 cup plus 3 Tbsp



DIRECTIONS


In a food processor purée garlic and pine nuts.

Add basil with remaining ingredients and puree until smooth season with salt and pepper.
