Seared Herb Potatoes
1 1/2 pounds assorted or Russian Bananas cut into 1 inch pieces
2 teaspoons salt
2 tablespoons pesto
salt and pepper
Place potatoes and salt in a medium pot and cover in warm water place on high heat, bring to a simmer. Let simmer until potatoes are fork tender. Remove from heat, drain off water and place in large skillet over medium high heat coat in pesto and season with salt and pepper. Cook until potatoes are a browned a bit about 5 minutes. Serve with any fish, chicken or beef.
4 cups packed fresh basil leaves, washed well
1/2 cup pine nuts, toasted
1/2 cup freshly grated Parmesan
2 large garlic cloves
1/4 cup plus 3 tablespoons
extra-virgin olive oil
In a food processor purée garlic and pine nuts add basil with remaining ingredients and puree until smooth season with salt and pepper.
